Safe and easy to use, this two-stage knife sharpener requires nothing but a few easy strokes to keep blades sharp. Its V-shaped cutting head with two crossed carbide blades puts a quick edge on knives. Simply place the gadget on a flat work surface and hold the E-Z grip handle with one hand and the knife handle with the other. Insert the knife blade fully into the slot at a 90-degree angle to the sharpener and pull down and back three or four times to sharpen. After setting the knife’s edge with the carbide side, use the unit’s ceramic side to nicely finish the edge. The gadget also comes equipped with a built-in scissors sharpener. To use, stand the sharpener on end with the non-skid rubber pad on the work surface and repeat the same process as if sharpening a knife. A “floating” round sharpening rod conforms to the exact angle of right- or left-handed scissors, sharpening both blades at the same time. The two-stage knife-and-scissor sharpener measures 8 by 3 by 1-1/2 inches.

(1) This Wusthof sharpener is the best, easiest sharpener that I have found. Being an outdoorsman as well as an enthusiastic amateur in the kitchen I have indeed tried all kinds of sharpeners…electric, hones, ceramic sticks, Lanskky system, etc. This sharpener puts a sharp edge on a chef’s knife and keeps it there. I’ve had no problem with gouges on the edge as described in previous review. At this price, how can you go wrong?
(2) Before this product, I had gotten the Furitech Diamond Fingers sharpener for my own knives, as I’m silly and am not sure how to use a sharpening steel properly.
However, I wouldn’t mind getting this one for myself soon. I had gotten this for my mother as an easy-to-use product to go along with nice J.A. Henckels knives. This Wusthof sharpener is nice because it has both a “coarse” side, for first stage sharpening (when they’re really dull) and a “fine” side for finishing (when it’s not that dull, or it’s been through the coarse side already). It gets the knives nice and sharp.
Secondly, there is a scissors segment—although my mother doesn’t have kitchen scissors, this would be nice if I had it as I have a knife set that has kitchen scissors. I’m actually tempted to just switch our sharpeners, as my mother actually uses hers so infrequently.
